My favorite soup around this cold and cosy time of the year. Now I know that everyone has their own way of making pumpkin soup, but I couldn’t resist to share my recipe with you. So there you go;
- 1 tsp Cumin
- 1 tsp Cinnamon
- 1/2 tsp Black peper
- 1/4 tsp Chilly pepper
- 1/2 tsp salt
- 2 tsp olive oil
- Water (enough to cover the pumpkin)
For me the pumpkin has already a lot of sweet flavors, so I don’t like to add a lot of ingredients only some spices to enrich the flavors. Start by cutting the pumpkin in half and make sure to remove all the seeds. Then cut the pumpkin in slices and peel the skin off (you can decide for yourself which step you take first). After peeling the pumpkin begin to slice it in small pieces.
Put all the pieces in a pan with olive oil and stir then for a couple of minutes. Adding onion and garlic to this recipe is definitely an option! Add the spices and stir it for a couple of minutes allowing the spices to set in to the pumpkin.
Side note, I absolutely love my hand blender! I would definitely recommend this to everyone who loves to make soup!
Add water to cover the pumpkin. You can decide for your self how thick you want your soup to be by adding more or less water.
Let it sidder until the pumpkin is soft enough to chop everything with the blender. And voila! You are all done 🙂
